3 Salad Mixes to Enjoy this Summer

It’s not yet late to start and opt for a healthy lifestyle!

Salads are easy to make and can be an on-the-go snack healthy alternative. Salads are perfect this summer for it is cooling and refreshing to eat. Listed below are salad recipes that are easy to make.

Tomato and Cucumber Salad

What you need:

  • 1 cup of peach dressing
  • 1 medium cucumber, peeled and cut
  • 2 pounds of heirloom tomatoes, sliced
  • 3/4 cup of thinly vertically sliced red onion
  • 1/2 cup of small basil leaves, divided
  • 1 teaspoon of salt
  • 3/8 teaspoon of ground pepper

What to do:

  1. Spread peach dressing in a large bowl.
  2. Add cucumber, tomatoes, onion, 1/4 cup basil, 1/2 teaspoon salt, and pepper to dressing.
  3. Mix evenly then arrange into a platter.


Melon Salad

What you need:

  • 1/2 cup of plain Greek yogurt
  • 2 tablespoons of chopped fresh flat-leaf parsley
  • 1 tablespoon of white balsamic vinegar
  • 1 tablespoon of extra-virgin olive oil
  • 2 teaspoons of honey
  • 2 teaspoons of fresh lime juice
  • 3/8 teaspoon of salt
  • 1/8 teaspoon of freshly ground black pepper
  • Dash of crushed red pepper
  • 2/3 cup of honeydew melon balls
  • 2/3 cup of watermelon balls
  • 2/3 cup of cantaloupe balls
  • 1 cherry radish, cut into thin slices
  • 2 center-cut bacon slices, cooked and crumbled
  • 12 small fresh basil leaves

What to do:

  1. Spread yogurt in a circle on a large serving plate.
  2. Combine parsley, vinegar, oil, honey, lime juice, 1/8 teaspoon of salt, black pepper, and red pepper in a medium bowl, stirring with a whisk. Add all melon balls and radish to bowl; toss gently.
  3. Using a slotted spoon, mound melon mixture on top of the yogurt (reserve vinegar mixture). Sprinkle evenly with bacon and remaining 1/4 teaspoon salt. Drizzle with 2 tablespoons reserved vinegar mixture; discard remaining vinegar mixture. Sprinkle evenly with basil leaves.


Watermelon Cucumber Salad

What you need:

  • 1 tablespoon of olive oil
  • 2 teaspoons of fresh lemon juice
  • 1/4 teaspoon of salt
  • 2 cups of cubed seedless watermelon
  • 1 cup of thinly sliced English cucumber
  • 1/4 cup of thinly vertically sliced red onion
  • 1 tablespoon of thinly sliced fresh basil

What to do:

  1. Combine oil, juice, and salt in a large bowl. Stir well.
  2. Add watermelon, cucumber, and onion.
  3. Mix salad evenly with a dash of basil.
